SAN BERNARDINO RICE
San Bernardino Court, originally known as Spiòn/Spiono, stands on the border between the municipal districts of Trevenzuolo and Vigasio. Its present-day name is thought to derive from the foundation in 1474 of an oratory dedicated to this Sienese saint, in recollection of his coming to preach in Verona province.

VIALONE NANO
Vialone Nano is one of the finest rice qualities produced in Italy.
It was created back in 1937 by an engineer of the name of Sampietro at the experimental rice-growing laboratory in Vercelli as a cross between the Vialone and the Nano varieties. Starting from 1945, it become more and more widespread in Verona province. Unlike other varieties, Veronese Vialone Nano is of Japanese origin and was apparently introduced to Italy by merchants who, like Marco Polo, made long journeys to the Far East to import local products.
PRODUCTION
The production of Vialone Nano is a lengthy and complex process, each step of which must be strictly conformed to. First of all, it is necessary to prepare the land. As early as spring, the perfect flatness of the land has to be verified in order to facilitate an optimal flooding of the rice field. The land has to be ploughed and turned over cyclically to facilitate oxidation and to modify the soil structure; in addition, organic substances are used to fertilize and enrich the land with the necessary nutrients. Furrows are of essential importance because they enable resurgent waters to emerge.
